Spetters (Breskens, The Netherlands)


The Place

Restaurant Spetters is 1 Michelin star restaurant located at the marina of the fishing village of Breskens in The Netherlands. It is established on the top floor of a premise where Chef Laurent Smallegange’s parents also manage two other restaurants. Restaurant Spetters became Laurent’s first restaurant and the gastronomic showpiece of the family.



Inside the restaurant we discover a modern interior that combines dark colours with wooden accents, subtle and warm lighting. Guests can start with their aperitif in the cosy parlour.


The walls are decorated with pictures from the yacht harbour and the boats. The views on the marina are beautiful and guests can even arrive by boat to have lunch or dinner at the restaurant.

In summer, customers can enjoy their meal on an outdoor terrace just next to the water.


The Chef

Chef Laurent Smallegange gained experience in some of the best restaurants of The Netherlands like Oud Sluis, De Librije and De Kromme Watergang. Laurent prepares creative dishes with seasonal ingredients and with respect for the products. He loves to work with fish and shellfish and tries to combine fish with meat. Asian influences also characterize his kitchen.

The Food

The delicious bread at restaurant Spetters is home-made and comes from the bakery that the owners manage nearby the restaurant.

Lacquered thymus , avocado pastille, seroendeng  (a mixture of coconut, peanuts, fried onions and spices like coriander, shrimp paste and cumin), roasted langoustine, avocado cream, small carrot and zucchini, sesame vinaigrette, herbs, mizuna, red beet sprouts & fresh lime

Pigeon on the green egg, celeriac, savoy cabbage and a sauce with thyme. Mashed potatoes, Savoy cabbage and gravy of the pigeon.

The Wines

Co-manager, maître and sommelier Wouter Denessen offers wine pairing arrangements and prepares delicious cocktails. Wouter also worked in De Librije and received several awards and recognitions for his work.
