Restaurant Dôme (Antwerp, Belgium)
Dôme is a gastronomic restaurant located in the Zurenborg area of Antwerp in Belgium. The restaurant became famous under the management of Chef Julien Burlat but was closed at the end of 2016. Frédéric Chabbert and his wife Evangeline took over the restaurant six months later and reopened with the same name.
They only changed some minor details in the decorations and created a nice and cosy terrace outside. On the first floor, a private dining room was created for dinners for up to 12 people. The eye-catcher of the restaurant is the unique dome, which gives the interior a colonial grandeur.
The building was originally built as a coffee and tea house by architect Jos Bascourt in 1893. Afterwards, the monumental building was transformed into a police station (with two prison cellar), a local school and a second-hand clothing store in the basement.
Frédéric Chabbert hails from France and was formed by culinary icon Alain Ducasse. Among other things, he worked in the prestigious Louis XV restaurant in Monaco and as executive chef in restaurant Petrus in the Shangri-La hotel in Hong Kong. With Dôme, Frédéric and his wife Evangeline start their own success story in Belgium. At the same time, the duo also took over the nearby located Dôme sur Mer, Julien Burlat’s fine fish bistro. Guests are welcomed by hostess Evangeline who learned the art of hospitality during a twenty-year long career in the Shangri-la Hotel Chain.
Frédéric started his culinary path at Dôme with a menu with 4 starters, 4 main courses and a few signature desserts. A 6-course menu is also available. We chose the dishes à la carte and enjoyed the following menu:
Pastry filled with creamy Parmezan
A broth of gray shrimps
‘Maatjes’ from the North Sea, tomato and cranberries
Slowly boiled egg, smoked eel, peas, pickled red onion
Anjou pigeon with a powerful sauce based on the pigeon, artichoke, confectioned lemon, and wild racket salad
As a cheese dish, Chabbert brings a goat cheese Lingot des Moines de la Dalmerie from the Cévennes with rosemary, pistachio and olive oil
Chocolate cake with dark chocolate 70%, praliné, and grated pure Brazilian cocoa
The “Belgian Taste Buds” Experience
At the new Dôme, Chef Frédéric Chabbert serves a solid product kitchen where he lets the product speak. He chooses for a lot of fruit and vegetables in the first courses and for delicious pieces of meat in the main courses. A full and honest cuisine that is grafted to the French classics. The dishes we tasted were very tasteful and Dôme seems to be on the way to become a new highlight for gourmet lovers in Antwerp’s culinary landscape.
