The Place

Restaurant Oud Sluis doesn’t really need an introduction. Located in Sluis (The Netherlands), this gastro temple gained fame and recognition when Sergio Herman took over the restaurant from his parents in 1990. Rewarded with 3 Michelin stars, 93/100 on Wbpstars.com, and a 20/20 Gault Millau score, Oud Sluis is one of the best and of the most famous restaurants in the world.

Unfortunately, this amazing restaurant will close its doors in December 2013. Sergio Herman will continue with other projects such as La Chapelle (Antwerp, Belgium) and Pure C (Cadzand, The Netherlands) and we’re excited to find out more about these and other upcoming projects.


We visited Oud Sluis on the first of August 2013 and enjoyed an incredibly refined, well balanced and modern lunch menu:


Basil – parmesan, fennel, olive and anchovy



Sea ​​bass – tartar, bergamot, lime and jalapeno


Crazy mushroom – mushrooms, avocado and brioche


Squid – rosemary and elderflower



Sardines – bread crystal, romesco, sea lavender and wild rocket


Bbq eel from Zeeland – ice of Japanese citrus and radish




Ceases – apple, celery, yuzu and toast ceramics



Hamachi – edible crab, dashi and buttermilk


Gillardeau oyster – potato, North Sea shrimp, meadowsweet, and young leeks

The “Belgian Taste Buds” Experience

A perfect balance in flavors with a structural tendency to use fresh and sour accents; an incredible eye for details and perfection; a notorious kitchen service (many have tried – only few survived!) and Sergio Herman himself make Oud Sluis to what it is today: an international renowned institution in the culinary world. Despite its closing in December 2013, the restaurant’s heritage will continue to influence chefs and foodies all over the world.

If you did not get the chance to visit Oud Sluis, do not worry: Sergio Herman will continue to build his gastronomical empire and La Chapelle and Pure C are just some of Sergio Herman’s new projects. With Nick Bril and Syrco Bakker by his side, these restaurants have the potential to become some of the best restaurants in the Benelux.
