La Distillerie (Bourglinster, LUX)

The Place

La Distillerie is a gastronomic restaurant in Luxembourg, awarded with 18/20 in the Gault&Millau guide. The restaurant is located inside the beautifully restored castle ‘Château de Bourglinster’ that can be found in the picturesque town of Bourglinster.  

Guests enter ‘Château de Bourglinster’ through the impressive bridge and gate which sets the atmosphere for a memorable experience.

The gourmet restaurant La Distillerie has its entrance on the main square inside the castle. The interior of the restaurant is characterized by the antique style that is found everywhere throughout the castle. White linen, spacious tables and atmospheric lightning and artworks enhance the comfort.

The Chef

Chef René Mathieu is responsible in the kitchen and cooks with respect for his colleagues, the ingredients and the environment. That last point is extremely important for the chef. Every day, he goes out foraging in the woods just in front of the castle, where he finds many herbs and vegetables for his kitchen.

The chef hails inspiration from these beautiful surroundings and that is translated in his dishes.. The chef uses modern techniques to create light dishes focussed on herbs, vegetables and fruits, that are bursting with flavours and creativity.

The Food

At La Distillerie you can choose between a vegetarian menu and a menu where the chef adds meat, fish and poultry. Unlike other restaurants, the chef uses his meat and fish as side products and the vegetables and herbs are the kings and queens of his plates. We enjoyed the full menu in May 2017:

Bonbon of green apple and cucumber with wasabi

‘Wood’ sorbet from woodruff herbs

Wild water shot from fresh geranium and ivy herbs

Frozen Cactus leave ‘caipirinha’ style

Biscuit with smoked hill fish, sesame and a sponge cake of wild herbs

Mackerel fish cooked with salt & coffee

Tempura of stachys plants with mushrooms

Nettle soup with mint

Structures of peas with strawberries

Menu

Asparagus selection with black sesame, a white asparagus espuma, fermented emulsion and herbs

Lobster, lemon velouté with fresh herbs, different mushroom variations and mushroom powder, a ravioli with herb cheese and finished with mushroom juice

Turbot slow cooked with turbot skin cracker, fennel and onion structures. Lemon caviar on top


Foie gras cooked on pine, millefeuille salad with duck and a juice with pine and orange

Lamb rack, turnip, radish, red beetroot, green olives, herbs from the field and smoked mugwort juice

Strawberry panna cotta, pomegranate, jasmine ice cream, rose, vanilla, orange blossom and patchouli

La Distillerie is probably one of the best and most remarkable gourmet restaurants in Luxembourg. Chef René Mathieu focusses on herbs and vegetables and serves his light and delicious dishes inside the stunning environment of an authentic, beautiful castle. A must stop in the small country of Luxembourg!
