The Food
After our great dinner at Innesto last year, we were excited to go back there to see how they evolved the past year. We went together with our colleague-blogger Frank from Be-Gusto and once again Koen Verjans surprised us with his tasteful, fresh and innovative dishes. From the appetizer till the dessert, every creation was light, with the right balance between freshness/ acidity, and strong flavors.
Appetizers
Anchovies Cake with river shrimps
Mussels, curry emulsion & crumble
Clam, avocado, yoghurt
Foie gras bonbon, beet and coffe crumble
Marinated tuna, cucumbes structures and samphire emulsion
Cod, bio vegetables, dashi bouillon
Poulet Noir (chicken), slowly cooked, potato, parsnip, chervil
White peach, citron verbena and spicy coconut candy bonbon

The Wines
The wine pairings were very pleasant, but no remarkable discoveries. Maybe a professional sommelier could get the wines and the wine arrangements to even higher levels?
The “Belgian Taste Buds” Experience
Our second Innesto experience was, once again, very good. Koen Verjans clearly manages the art of cooking and surprises with fresh, light but tasteful dishes. This restaurant is a great entry to the Belgian high end gastronomy, and a watch-out-for-me place the coming years!
