Cor de Chasse is a hotel and 1 Michelin star restaurant in Wéris, a small town near Durbuy in Wallonia. Wéris is known as one of the most beautiful villages in Wallonia, praised for its dolmens and menhirs and houses in 17th– and 18th-century architecture.

Together with Be-gusto and our wives, we enjoyed a beautiful December weekend in Wéris and tasted several dishes during a 6-course dinner and a 3-course lunch.
Razors with citrus
Duck with a vinaigrette, candied potatoes, crispy pig skin and potato
Veal with an emulsion of potato, cheese bleu de Morville, romanesco
Two times Saint Jacques: First preparation with cucumber, ponzu and fresh cheese from Morville. A second preparation with chervil root, ointment of egg yolk and cream of dashi
Dorade with salsify, pear, truffle, parmesan and an emulsion of rocket and cashew nuts
Crispy fried Langoustine with red onion
Roebuck calf with celery, passion fruit, crunch of red fruit, and Goji berries
Banana with a gel of agrum, crumble of banana, tuile of yogurt and cream of parsley
