Aqua (Wolfsburg, Germany)
Restaurant Aqua is one of Germany’s best restaurants, located on a unique location in the heart of Volkswagen’s Autostadt, just outside Wolfsburg. The restaurant is awarded with 3 Michelin stars and a 19/20 score on Gault&Millau in Germany.
Wolfsburg is located in Northern Germany and not far away from Hannover and only a one-hour train ride from Berlin. Autostadt is a theme and experiential park adjacent to the Volkswagen factory with a primary focus on cars. It is property of the Volkswagen group and features a museum, numerous pavilions from the Volkswagen car brands, and several other attractions. In the middle of the park one will find the Ritz-Carlton hotel and the famous restaurant Aqua. The Ritz-Carlton Wolfsburg is a unique hotel and one of the flagship properties of the Ritz-Carlton hotel group. Embracing the industrial buildings from the theme park, The Ritz-Carlton Wolfsburg is designed as a circular building with lots of glass and natural stone. The backside of the hotel is situated right next to the original Volkswagen port basin. From many of the rooms, the restaurants, the spa, and last but not least, the incredible outdoor floating pool, guests have a stunning view of the four majestic chimneys of the original 1930’s Volkswagen Kraftwerk Power Station. Swimming in the extra-large floating pool on a cold day, with the view on the working chimneys, is simply magical. Oh and do not worry, this pool is always heated to 30°.
Restaurant Aqua is situated on the ground floor of the hotel. The restaurant’s interior was renovated some years ago and today it is contemporary, featuring minimalistic details that often refer to ‘Aqua’ (water). Several landscape photographs set the atmosphere and the modern, sleek interior forms the perfect setting for Executive Chef Sven Elverfeld’s avant-garde cuisine. The details from the chef his plates are mirrored in the interior, creating a dining experience that tickles all senses.
Executive Chef Sven Elverfeld is one of Germany’s most famous chefs. Sven gained experience in several German restaurants, before moving to the Ritz-Carlton in Dubai, where he worked for two years. He started cooking at Aqua at the Ritz-Carlton Wolfsburg in the golden year 2000, and moved the restaurant to the world’s culinary top in no time.
Sven Elverfeld’s cuisine is filled with contrasts and surprises. The brilliant chef constantly deconstructs, reinvents and improves his cuisine, which is built with mainly European influences. Aqua’s cuisine is also influenced by both Sven’s childhood and his travels and different jobs abroad in countries such as Japan, United Arab Emirates, Canada and Greece. His inventive, yet relaxed and curious approach to cooking, results in a dinner experience that is a must for all food lovers.

Veal tongue “Berlin”, Sliced goose liver, apple, braised Cipolla onion & potato
Roasted pork chin & warm marinated langoustine, Fermented carrots, crustacean mayonnaise, coriander & ginger
Saddle of lamb from Muritz – cooked in hay, Topinambur, ricotta, herbs & hazelnuts
Pigeon breast „Jean Claude Miéral“, Aubergine, avocado, soya, Pak Choi, roasted garlic & bergamot

Everyone from Restaurant Manager Jimmy Ledemazel’s team makes sure every guest is treated like a royal and has a quality experience. Sommelier Marcel Runge worked in some top restaurants in Germany and his experience and passion is translated into excellent wine pairings. You will definitely discover a great Riesling or another top German wine when you opt for his wine pairing arrangement!
