A Priori (Haaltert)
A Priori is a 1 Michelin star restaurant in Haaltert, a small town between Brussels en Ghent.
The restaurant opened in 1996 and the chef and his wife bring a contemporary concept with innovative food. The dark interior combines black with green accents and the dining room has a nice view on the garden and adjacent park.
Kristof Coppens developed his own cooking technique and uses modern, molecular influences to upgrade his dishes. His kitchen evolves constantly and Kristof is always looking for ways to improve. The chef is also active as a food consultant and has his own wine-shop: ‘Gastro-wines’. He gained experience in restaurant Deboeverie(Gavere), ‘t Laurierblad(Berlare) and Apicius (Ghent). In November 1996 he and his wife Carla opened restaurant A Priori.
The chef chooses simplicity to define his cooking style. He wants to be critical for himself and his team so they can continuously improve their dishes. Kristof only chooses fresh, pure products and lets the ingredients dominate in his preparations. As a pioneer of the molecular kitchen, he calls science and technology his allies in creativity.
We arrived in Haaltert together with blogger ‘Be-Gusto’ and enjoyed a special 4-course resto.be menu. The restaurant normally offers a 3 course lunch (40€) or a tasting menu (4 courses 65€, 5 courses 74€).
Appetizer: Sardine, samphire mousse, tomato structures
Swordfish with tzatziki, red onion sorbet and cucumber
Baked Sole, with white asparagus, beans, broccoli
Lamb, couscous, eggplant, olives cream and gel of yellow pepper
Lychee sorbet, prepared by the chef in the dining room with nitrogen
Panna cotta, ginger cookie, banana, vanilla, kumquat and chiboest
Coffee & sweets
Wines were of good quality, but we did not take detailed notes and missed a bit of explanation & knowledge by/from the young sommelier.
The “Belgian Taste Buds” Experience
We enjoyed & experienced a pleasant contemporary menu with molecular touches in restaurant A Priori. The dishes were tasty and prepared with traditional ingredients. We missed a little bit of creativity in the ingredient choices, and flavors could have been more spectacular.
The Lychee sorbet was the unexpected surprise of the evening: the preparation was impressive, but the flavor stole the show! With its delicately sweet taste, incredible soft texture and very fresh accents this is a sorbet we would return for.
